Pecan Crunch Apple Pie

1 9-inch pie shell; unbaked
2 cups chopped cooking apples
½ cup brown sugar; firmly packed
½ cup granulated sugar
½ cup all-purpose flour
1 egg yolk; beaten
½ teaspoon vanilla extract
½ teaspoon freshly squeezed lemon juice
½ cup Pecan Valley Pecan Pieces
1 egg white; beaten until foamy

1. Preheat oven to 350ºF.
2. Put chopped apples in a large bowl. Add sugar, flour, egg yolk, vanilla, lemon juice and pecans; mix well. Add egg white. Stir well and pour mixture into unbaked pie shell.
3. Bake in a preheated oven for 30 to 45 minutes or until apples are tender and brown.
