- 1 cup Pecan Valley Pecan Pieces
- 1 tablespoon flour
- 1 tablespoon corn starch
- 2 large egg whites
- 1 pinch salt
- 1 cup light brown sugar; firmly packed
- Preheat oven to 350ºF.
- Chop the nuts medium fine. Mix the nuts, flour and cornstarch in a small bowl.
- Beat the egg whites until stiff, adding sugar gradually. Fold in the flour/nut mixture.
- Drop by spoonfuls onto parchment paper.
- Bake in preheated oven for about 18 to 20 minutes then remove cookies to a wire rack and cool to room temperature.
